tangy chicken tikka

Make your favourite Chicken Tikka snack at home with Del Monte Achari mayo giving it a delicious Indian tadka. This is going to be your favourite party snacker. You can prepare it in your Oven, Tandoor, Barbeque or in a Grill pan.

Ingredients

1 Cup Boneless Chicken (Cubes Of 1-2 Inch)
1/2 Cup Thick Yogurt
1/4 Cup Del Monte Achari Mayo
1 TBSP Cooking Oil
1 Capsicum (1 Inch Cubes)
1 Tomato (1 Inch Cubes)
1 Onion (For Serving)
- To Taste Salt
1/4 Tsp Black Pepper
1/2 Tsp Red Chilli Powder (More If Your Prefer Spicy)
1 Tsp Ginger-Garlic Paste
2 Tsp Cumin Powder
1 Tsp Dried Coriander/Parsley
1 Big Lemon
- Coriander Chutney (For Serving)

Method


  1. Prepare the chicken- Cut the chicken into 1-2 inch cubes, to make them uniform for grilling later.
  2. Marinate the chicken- In a bowl, take thick yogurt, oil, and Del Monte Achari Mayonnaise and mix well. Now add the seasoning- black pepper, red chili powder, cumin powder, dried coriander, ginger- garlic paste, lemon juice, and salt. Mix well again. Add in the chicken to these and coat each of the pieces well with the marination prepared. Let it rest in the refrigerator for at least 1 hour. Overnight works best.
  3. Prepare the vegetables- Chop the capsicum and tomato into 1-inch cubes to make them uniform for grilling. Add some salt and red chili powder to these and mix in a bowl to season them before grilling. Keep aside for 30 min.
  4. Grilling- Take your skewers and carefully line in the order of 1 piece of marinated chicken, 1 piece capsicum, and 1 piece tomato. Repeat this 2-3 times till your skewer is full (leaving space for holding at the ends)
    You can use a tandoor/ oven/ griller on gas to cook them. 
    Tandoor/BBQ- Set your tandoor or barbeque as per instructions of your brand, attach the skewers and let it cook, till it becomes dark orange in color, about 20-30 min, and charred at some places. Turn 1-2 times in between.
    Oven- Use the grill/ broiler function and cook for 20-30 min to make sure chicken is not pink still. You can also cook them using an oven-safe plate at 180C for the same time.
    Grill Pan- The skewers can be cooked on a grill pan on the gas with some oil. Keep turning regularly to cook evenly on all sides.
  5. Plating the Chicken Tikka- Serve the chicken tikka with some coriander chutney, an extra drizzle of Del Monte Achari Mayo on top. Slice some lemons and onions (can be vinegar dipped onions) for the sides.


Notes-

1. You can adjust the level of seasoning as per your preferences. Increase or decrease it by ½ tsp, to make it less or more spicy.
2. Look for Chicken Thigh or Breast pieces to get nice even cubes for grilling.
3. The recipe uses Metal Skewers which are oven and BBQ safe. If you are using Bamboo/Wooden skewers for cooking, make sure to dip them in water before hand for at least 30 min as they can burn easily. You can use Bamboo Skewers for serving purposes directly.
