Blueberry Lemon Shortbread

Like they say, life is as exciting as you ‘bake’ it. All you ‘knead’ is the Del Monte Dried Blueberries and your perfect Blueberry Lemon Short Bread Cookies is ready to pump up your day.


1&1/4 cup All Purpose Flour
100 grams butter, cold, cut in small cubes
1&1/2 teaspoon lemon zest
1/3 Cup Del Monte Dried Blueberries
4 tablespoons caster sugar
1-2 tablespoons cold water if needed


  1. Pre-heat the oven at 170 degrees Celsius
  2. In a bowl, add flour, lemon zest and sugar. Mix very well.
  3. Add butter and start mixing with your fingers until it resembles the coarse crumbs.
  4. Add blueberries and mix.
  5. Add cold water and bring the dough mixture together to form a one ball.
  6. Cover with the cling wrap and refrigerate for 20 minutes.
  7. Now, remove the dough from the wrap and lightly flour it.
  8. Roll the ball into a disc with thickness of 6-7 mm do the rolling of ball between the two-parchment paper.
  9. Using cookie cutter, cut the rolled into depending upon the size of the cookie you require to make. I made it in to mini cookies.
  10. Place the cookies on to a baking sheet or tray and bake it for 20-25 minutes or until the bottom of the cookies and edges begins to brown.
  11. Allow the cookies to cool for few minutes and then transfer on wire rack to cool completely.
