CAPRESE PASTA SALAD

We all love the good 'Ol caprese fresh mozzarella and cherry tomatoes. But hey, we just made it even better with the Del Monte Whole Wheat Pasta. Try it out now

Ingredients

200 Grams Del Monte whole wheat penne pasta
1/2 Cup Del Monte Extra Virgin Olive Oil
1 tsp Lemon Juice
1 TBSP Balsamic Vinegar
1 TBSP minced garlic
- Salt and pepper to taste
1/2 red onion, chopped
1 Cup Cherry Tomatoes, Halved
125 gms mozzarella cheese, chopped to bite sized pieces
A handful of fresh basil, chopped

Method

  1. Make the dressing by combining extra virgin olive oil, lemon juice, balsamic vinegar and garlic, salt and pepper.
  2. In a pan, boil water with salt added to it. Once boiling, cook the whole wheat penne pasta according to package instructions, till al dente. Drain and set aside.
  3. In a bowl add the pasta, cherry tomatoes, red onion, mozzarella. Pour dressing over pasta salad and toss to combine.  Check seasoning. Let sit 2 hours in the refrigerators for the flavors to develop.
