Cranberry Barfi

A little sweet, a little crunchy makes these fuss-free festive treats easy to recreate. They’re appetising with a hint of fruity blueberry and are perfect to satiate the sweet cravings.


1 Cup Milk
2.5 Cups Milk Powder
1 TSP Cardamom Ground
1/4 Cup Delmonte dried cranberries
1 Tsp Lemon Juice
- Dried cranberries to garnish
- Chopped pistachio to garnish
- Edible silver foil to garnish


  1. Line a 8 inch square dish with butter paper so it hangs over all sides of the dish.  
  2. In a nonstick pan, heat Milk and ghee and stir until the ghee is almost combined.  
  3. Reduce the heat to the lowest setting and  Add in the milk powder and mix well. Continue to still for 4-5 minutes without break.  
  4. Add in the sugar and mix well till melted.
  5. Once the mixture is reduced to half,  add in the cardamom powder, lemon juice and cranberries and mix well.
  6. Continue to mix the barfi batter till it starts to pull away from the sides and leaves no residue.
  7. Scoop the batter into the lined square dish and make it as  level as possible.
  8. Spread and press the chopped pistachios and cranberries across the top.  
  9. Cover and refrigerate for at least 30 mins or until set completely.
  10. Once its set, use. the parchment paper to lift it out of the dish.
  11. Apply silverfoil sparingly on the barfi.  
  12. Cut the barfi in square pieces and serve chilled.
