Cranberry Kale Salad 

This easy holiday salad gets its flavor from a sweet citrus dressing that's infused into the kale by massaging the greens and the dressing together with your hands.

Ingredients

1.5 cup chopped Curly kale
1/2 Cup Cooked Quinoa
1/2 Cup A Little Less Than Delmonte Cranberry
1/4 Cup Sliced And Toasted Almonds
- For Dressing
1/2 cup Delmonte extra virgin olive oil -
1/8 cup Apple cider vinegar
1.5 tsp Maple syrup
- Salt and pepper to taste

Method


  1. Bring ¼ quinoa to boil with ½ cup water in a pan. Once boiling , reduce the
    heat to simmer and cover and cook for around 15 minutes till all the water
    is absorbed. Set aside
  2. Chop kale into thin shreds and toast almonds in and non stick pan till golden brown.
  3. For the dressing, in a bowl comine all the ingredients and stirr well.
