FARFALLE WITH ROASTED CHICKEN AND ORANGE CELERY DRESSING

When Asian flavour gets a tangy twist, Farfalle with Roasted Chicken and Orange Celery Dressing is born. When are you going to prep up this one?

Ingredients

2 Cups DelMonte Farfelle
2 Roasted Chicken Breast
1/2 Cup Orange Juice, Freshly Squeezed
4 TBSP Extra Virgin Olive Oil
1.5 TBSP Chilli Flakes
1/4 Cup, Celery, Finely Chopped
1 TBSP Finely Crushed Garlic
1 Lettuce (Roughly Torn)
1 Cucumbers, Cubed
1 Lemon Juice
1 TBSP Salt To Taste
1/2 Cup Red And Yellow Bell Peppers, Finely Chopped

Method

  1. Take all the dressing ingredients together and blend it well.
  2. Refrigerate the dressing for 30 minutes.
  3. Cook the farfalle pasta as per the instructions on the packet. Cool the farfalle pasta completely.
  4. Take the cooked farfalle pasta and bell peppers in a bowl. Season it with salt, pepper and prepared dressing. Toss it well.
  5. Slice the roasted chicken, and place it on the serving plate along with tossed farfalle pasta. Put lettuce and cucumber on the sides of the plate.
  6. Serve it as a cold salad platter. 
  7. Enjoy your meal.
