RAINBOW FRUIT PARFAIT
Make this delicious fruit fiesta with Del Monte Fruit Fiesta, nuts, heavy cream, lemon zest, vanilla extract, and honey. This fruit parfait can be had as a breakfast or snack.

Method
- In a bowl add fruit cocktail and chopped nuts. Mix well and set aside.
- In another bowl, add heavy cream. Whip to soft peaks. Add the zest of 1 lemon, vanilla extract and honey. Fold them into the whipped cream. Refrigerate for two hours.
- To assemble the fruit parfait, add two tablespoons fruit mixture, top with 3-4 tablespoons of cream, another layer of fruit mixture and more cream. Repeat for all the glasses. Serve immediately or refrigerate for 6-8 hours before serving.
