Sweet Corn Soup

One of the most popular Indo-Chinese dishes, Sweet Corn Soup is a total comfort food. It's super easy to make and full of soothing flavours. The delicious Del Monte Whole Kernel Corn are just perfect for this recipe.

QUANTITY INGREDIENT
1 Cup Del Monte whole kernel corn
1 cup finely chopped and boiled mixed vegetables (carrots and french beans)
1 tbsp butter
1 green chilli, finely chopped
1 1/2 tsp finely chopped garlic
1 1/2 tsp finely chopped ginger
1 stalk of celery finely chopped
1 spring of spring onion green, chopped
some salt & pepper as per taste
1/4 tsp soy sauce

Method

  1. Firstly, get the star of the show ready. In a food processor pulse half cup of Del Monte Whole Kernel Corn to a coarse paste. 
  2. Heat butter in a deep non-stick pan, add celery, ginger, and garlic and sauté on a medium flame and allow the aroma to envelop your home in its sweet embrace .
  3. Nowadd the crushed sweet corn, mixed vegetablesto themix and sauté on a medium flame for 2- 3 minutes. Stir continuously.
  4. Time for the liquids to play their part. Add 4 cups of water or vegetable stock, soy sauce, green chili, salt, and pepper to the other ingredients and mix well.
  5. Simmer on a medium heat for another 5 - 10 minutes or till the soup thickens a bit. Stir once in a while.
  6. Taste and adjust the seasoning accordingly. Be careful not to forget the salt.
  7. Garnish with chopped spring onion green and serve it hot.
