Veggie Burger with Tandoori Mayo

QUANTITY INGREDIENT
2 Sesame Burger Buns
1 cup cooked chickpeas
½ cup finely chopped carrots
½ cup fresh corn
½ cup chopped green capsicum
1 cup Besan
- Salt and pepper to taste
2 tbsp oil
½ cup Del Monte Tandoori Mayo
1 cup Green Lettuce
1 cup diced tomatoes
1 cup finely chopped onion
2 slices of cheese

Method

 
  1. Halve the burger buns and toast the inside till crisped up a little. 
  2. Mash cooked chickpeas and blend it with carrots, fresh corn, capsicum salt and pepper, shape it into patties and coat with besan flour. 
  3. In a saucepan over medium heat, heat the oil and shallow fry the burger patties 6 mins on each side or until golden brown and crispy. 
  4. For assembly, over the lower half of the burger bun, add lettuce, burger patty, cheese slice, followed by a good drizzle of Del Monte Tandoori Mayo. Top with chopped onion and tomatoes and the upper burger bun. Serve.
