South West Chipotle Falafel Bowl

A fresh, hearty bowl with crispy falafel, sautéed quinoa, and vibrant veggies, topped with Del Monte South West Chipotle Dressing for a spicy kick! Perfect for a balanced, satisfying meal.

Ingredients

1 cup boiled chickpeas
1 cup parsley
1 cup coriander leaves
1 tsp Garlic (Chopped)
1 tsp ginger chopped
1 tsp jeera
1/2 tsp Baking powder
- Salt and pepper to taste
1 cucumber sliced
1 cup purple cabbage
1 cup quinoa, cooked
1 cup yellow and red bellpeppers
1 big lettuce
1/2 Lemon Slice

Method

 
  1. Blend all ingredients of the falafel and form balls. 
  2. Deep fry these and keep aside  
  3. Heat oil in a pan and sauté quinoa, and bell peppers with salt and pepper for a minute on high flame 
  4. In a large bowl, spread lettuce at the bottom and add in the quinoa mix, purple cabbage, cucumber slices and falafel. 
  5. Squeeze 1/ 2 lemon.  
  6. Drizzle Del Monte South West Chipotle over this and serve warm
