Sweet Corn Soup
One of the most popular Indo-Chinese dishes, Sweet Corn Soup is a total comfort food. It's super easy to make and full of soothing flavours. The delicious Del Monte Whole Kernel Corn are just perfect for this recipe.
Ingredients
1 Cup | Del Monte whole kernel corn |
1 cup | finely chopped and boiled mixed vegetables (carrots and french beans) |
1 tbsp | butter |
1 | green chilli, finely chopped |
1 1/2 tsp | finely chopped garlic |
1 1/2 tsp | finely chopped ginger |
1 | stalk of celery finely chopped |
1 | spring of spring onion green, chopped |
some | salt & pepper as per taste |
1/4 tsp | soy sauce |
Method
- Firstly, get the star of the show ready. In a food processor pulse half cup of Del Monte Whole Kernel Corn to a coarse paste.
- Heat butter in a deep non-stick pan, add celery, ginger, and garlic and sauté on a medium flame and allow the aroma to envelop your home in its sweet embrace .
- Nowadd the crushed sweet corn, mixed vegetablesto themix and sauté on a medium flame for 2- 3 minutes. Stir continuously.
- Time for the liquids to play their part. Add 4 cups of water or vegetable stock, soy sauce, green chili, salt, and pepper to the other ingredients and mix well.
- Simmer on a medium heat for another 5 - 10 minutes or till the soup thickens a bit. Stir once in a while.
- Taste and adjust the seasoning accordingly. Be careful not to forget the salt.
- Garnish with chopped spring onion green and serve it hot.
