TOMATO PASTA SOUP

Simple, fast, easy, healthy and cooked in a pot, One Pot Tomato Pasta Soup makes weeknight cooking a breeze! It’s a hearty delicious meal of pasta in a tomato-based soup flavoured with dill and Italian seasoning. This is all you need to fill your heart with warmth and tummy with yummy.

Ingredients

3 Cups Del Monte Penne Rigate
600 G Ripened Tomatoes
1/4 Cup Del Monte Tomato Ketchup
1 TBSP Garlic
1 TBSP Italian Seasoning
3-4 Sprigs Dill Leaves
3/4 Cup Onions
5-6 Cups Vegetable Stock
1 TBSP Sugar
1 TBSP Sugar Salt, Pepper & Chili Flakes To Taste
2 TBSP Olive Oil
2 TBSP Butter
1 Mozzarella Cheese As Required

Method

  1. In a heavy bottom pan, heat olive oil and butter together.
  2. Add finely chopped garlic and fry for a couple of minutes. Add onions and fry until soft and pink. Add chopped tomatoes, dill leaves, tomato ketchup, Italian seasonings and mix. Cook on high for 2 minutes. Cover and cook until the tomatoes are cooked well.
  3. Using a hand blender or a normal blender, blend the cooked tomatoes mixture until smooth.
  4. Now add vegetable stock (as required according to the consistency) and bring it to a boil. Season with salt, pepper and chili flakes.  Once the soup comes to boil, add penne rigate and cook al denté.
  5. Dish out and garnish with grated mozzarella cheese and serve immediately.

The ultimate cozy soup is ready to be enjoyed!
