LEMONY RED PEPPER AND ASPARAGUS PASTA SALAD
This mouth-watering pasta salad is the ultimate dish to serve at any summer party.
Red Bell Pepper (Sliced)
Yellow Bell Pepper ( Sliced )
Onion ( Cut Into Slices )
TBSP Del Monte Olive Oil
TBSP Lemon Zest
TBSP Lemon Juice
TBSP Honey
TBSP Salt To Taste
TBSP Freshly Cracked Black Pepper
TBSP Garlic Powder
TBSP Spring Onion Greens (Chopped)
GM Del Monte Spirali Pasta
GM Asparagus ( Cut Into Pieces )
- Heat water in a large pot.
- Once it comes to a boil, add 2 tbsp salt and Del Monte Spirali Pasta.
- Cook until pasta is done.
- Add asparagus just 2 minutes before the pasta is done.
- Drain and keep aside.
- Heat 2 tsp olive oil in a pan and roast the peppers until slightly charred.
- Remove the peppers in a plate and cool.
- Mix pasta, asparagus, roasted peppers and onions in a bowl.
- Mix Del Monte Olive Oil, lemon zest, lemon juice, honey, salt, black pepper and garlic powder in a another powder.
- Pour the dressing over the salad and toss well.
- Garnish with spring onion greens.
- Serve immediately.
