Tandoori Mayo Oats Veggie Pancake

These hearty oats veggie pancakes bring together the goodness of fiber-rich oats, fresh veggies, and a hint of spice. Topped with creamy Del Monte Tandoori Mayo, they’re a wholesome and flavorful twist to your breakfast or snack time!

Ingredients
1 cup

oats flour

1 cup

chopped spinach

¼ cup

finely chopped onion

¼ cup

finely chopped red bell pepper

¼ cup

grated carrot

¼-¾ cup

water

-

Salt and pepper to taste

1/4

cup Del Monte Tandoori Mayo

-

Cherry tomatoes for garnish

-

Olive oil for greasing

Method
 
  1. For oats flour, roast rolled oats and grind it in smooth powder. 
  2. Blend water and spinach together and keep aside.
  3. In a bowl, mix oats flour, onions, carrots, red bell pepper, spinach water and salt and pepper to form a smooth batter. The batter should be thick, not runny.
  4. Heat a pan and spread 2 tbs of the batter into a round shape and cook on both sides.  
  5. Repeat this for the rest of the batter.
  6. Top it with Del Monte Tandoori Mayo & garnish with cherry tomatoes and coriander.
  7. Serve immediately.
