Tandoori Mayo Oats Veggie Pancake
These hearty oats veggie pancakes bring together the goodness of fiber-rich oats, fresh veggies, and a hint of spice. Topped with creamy Del Monte Tandoori Mayo, they’re a wholesome and flavorful twist to your breakfast or snack time!
oats flour
chopped spinach
finely chopped onion
finely chopped red bell pepper
grated carrot
water
Salt and pepper to taste
cup Del Monte Tandoori Mayo
Cherry tomatoes for garnish
Olive oil for greasing
- For oats flour, roast rolled oats and grind it in smooth powder.
- Blend water and spinach together and keep aside.
- In a bowl, mix oats flour, onions, carrots, red bell pepper, spinach water and salt and pepper to form a smooth batter. The batter should be thick, not runny.
- Heat a pan and spread 2 tbs of the batter into a round shape and cook on both sides.
- Repeat this for the rest of the batter.
- Top it with Del Monte Tandoori Mayo & garnish with cherry tomatoes and coriander.
- Serve immediately.
