ACHARI QUESADILLAS
Bring an Indian twist to this mexican favourite with the Del Monte Achari Mayo. Serve it for snacks or for dinner and watch your family drool.
Yellow Bell Pepper Thinly Sliced
Red Bell Pepper Thinly Sliced
Green Capsicum Thinly Sliced
Medium Onion Thinly Sliced
Cup Sweet Corn
Curry Leaves
TBSP Finely Chopped Coriander
TBSP Jeera
TBSP Haldi
TBSP Red Chilli Powder
TBSP Oil
Cup Achaari Mayo
Flour Tortillas
Salt To Taste
- In a pan, heat oil and add jeera. When jeera begins to pop, add the onions and saute for 30-40 seconds on medium flame.
- Then add the bell peppers and cook them till soft.
- Add corn and spices and cook for 2 more minutes.
- Finally, add coriander and mix well. Turn off the gas.
Assembling the tortilla-
- Heat the pan and lightly toast one side of the tortilla.
- Then on that side, spread a generous amount of achari mayo and add in the veggie mix in half and fold like a semi-circle.
- Heat oil in a pan and place this tortilla and roast both sides till golden brown by gently pressing it
- Slice the quesadillas and serve hot.
